Chartwells Catering


Saint Mary’s University takes pride in our food service provider, Chartwells, which features fresh, made-from-scratch meals. Buffet-style meals utilize a traditional all-you-can-eat service. Hot and continental breakfasts are available with fresh eggs, hot potatoes, pastries, juices, cereals, and of course, piping hot coffee. Lunch and dinner offer a variety of entrées with the traditional accompaniments, a full soup and salad bar, and dessert selections. A full complement of beverages is available at each meal. Special dietary needs can be arranged as needed. Conference groups may elect to have all buffet-style meals or mix and match with catered food. Catering for banquets, snacks, breaks, parties, receptions, and picnics is also provided. Our professional staff is capable of providing delicious, attractive selections, from elegant dinners to theme buffets.

All guests hosting a catered event on campus must go through the Office of Event Services.

Chunks of pineapple, grapes and nuts combined for a refreshingly Hawaiian taste. Served on a bed of greens.

Grilled Chicken Caesar Salad
Marinated and grilled chicken breast, served on a bed of crisp romaine lettuce, red peppers, garlic croutons and shaved parmesan cheese, all tossed in a creamy Caesar dressing.

Southwest Chicken Salad
Grilled chicken, fresh tomato cilantro salsa, cucumbers, cheddar cheese, olives, and toasted sesame seeds. Garnished with fried corn tortillas topped with lime cilantro dressing on crisp romaine greens.

Grilled Salmon Salad
Grilled salmon on a bed of wild greens drizzled with lime-ginger dressing and garnished with sliced mango.

Blackened Petite Sirloin Salad
Louisiana-Cajun seasoned Petite Sirloin, thinly sliced and served over a bed of wild greens. Topped with sweet red onion, chopped eggs and seasonal vegetables, balsamic dressing and parmesan croutons.

French Style Croissant Luncheon Special
French style croissants . . . Chicken or tuna or ham salad served on croissants. Prepared from fresh ingredients with a mayonnaise base. Served with lettuce and tomato.

Classic Club Sandwich
Smoked turkey, honey ham, crisp bacon, lettuce, tomato and Swiss cheese on a buttery croissant.

Little Italy Sandwich
Pesto grilled chicken breast topped with fresh mozzarella cheese, marinated tomatoes, and lettuce. Served on a garlic herb roll.

Alcoholic beverages are allowed only in the room in which they  are being served. The client and/or organizers of the sponsoring group where alcoholic beverages are being served will be primarily responsible for the decorum of the event.
